Moroccan Chicken with Olives

Global spice blend infuses tender chicken with exotic flavors.
Ingredients:
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 2 garlic cloves, finely chopped
  • 1 cut-up whole chicken (3 to 3 1/2 pounds)
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 teaspoon chicken bouillon granules
  • 1/2 cup Kalamata or Greek olives
  • 1 medium lemon, sliced
  • Hot cooked couscous or rice, if desired
Instructions:
  • Preheat oven to 350°F.
  • Combine fresh cilantro, paprika, cumin, salt, turmeric, ginger, and garlic into a fragrant spice paste. Thoroughly coat all sides of the chicken with the mixture.
  • Dredge chicken in flour and transfer to a 13x9x2 inch ungreased baking dish. Combine water, lemon juice, and bouillon granules; then pour over chicken. Garnish with olives and lemon slices.
  • Bake for about 1 hour, basting chicken with juices occasionally, until chicken is fully cooked. Serve with couscous.
