Moroccan chicken with green olives, lemon broth, onions, and ginger.
Ingredients:
  • 1 (2 to 3 pound) whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • salt to taste
  • ground black pepper to taste
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon paprika
  • 1 pound pitted green olives
  • 1 lemon, juiced
Instructions:
  • In a large saute pan, heat oil and saute onions with ginger and paprika until golden.
  • Arrange chicken over a bed of onions, then pour in 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Simmer for approximately 1 hour until the chicken is succulent.
