Moroccan chicken wrap with tahini sauce

Ingredients:
  • 4 chicken thigh fillets
  • 18.20 gm olive oil
  • 5.00 gm Moroccan spice mix
  • Grated zest 1 lemon
  • 120g baby mesclun salad
  • 2 tomatoes, sliced
  • 4 round flat Lebanese breads
  • 180g (3/4 cup) Greek Style Yoghurt
  • 24.00 gm tahini
  • 21.00 gm lemon juice
Instructions:
  • In a shallow dish, lay the chicken. Mix oil, Moroccan spice blend, lemon zest, salt, and pepper; massage onto the chicken. Cover and marinate for 15 minutes.
  • In a bowl, mix together yogurt, tahini, garlic, and lemon juice, then season to taste. Set aside.
  • Grill the chicken under a preheated grill for 10-12 minutes, flipping halfway. Let it rest for 5 minutes, then slice thinly.
  • Place a vibrant mixture of salad leaves, juicy tomatoes, creamy tahini sauce, and tender sliced chicken in the middle of each flatbread. Fold and enjoy while still warm.
