Delicious tomato and green pepper salad, perfect hot or cold.
Ingredients:
  • 2 green bell peppers
  • 3 tablespoons olive oil
  • 4 fresh tomatoes, peeled and chopped
  • 2 teaspoons sugar
  • 1.5 teaspoons paprika
  • 1 teaspoon fresh parsley
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • ground black pepper to taste
  • 1 (2.25 ounce) can sliced green olives
Instructions:
  • Preheat the broiler in the oven.
  • Place the green bell peppers on a baking sheet, broil and turn occasionally until tender and scorched on all sides, about 5 minutes. Remove from heat, peel, and chop.
  • In a skillet, warm the olive oil and sauté the peppers and tomatoes. Sprinkle sugar over the mixture. Season with paprika, parsley, cumin, salt, garlic powder, and pepper. Cook until tomatoes are heated through. Garnish with olives before serving.
