Slow cooked moroccan chicken

Ingredients:
  • 800g chicken breast or thigh pieces, cut into 3cm pieces
  • 1 capsicum, roughly chopped
  • 1 carrot, roughly chopped
  • 1 onion, sliced
  • 187.50 ml green beans or frozen peas
  • 1 tomato, diced
  • 62.50 ml dried apricots or apricot jam
  • 20.00 gm moroccan spices
  • 510.00 gm chicken style liquid stock
  • 1 clove garlic
  • 1 tsp chilli powder
  • 1 tsp lemon zest, finely grated
  • 125.00 ml coriander, leaves only, finely chopped, to serve
  • 10.00 gm cornflour, to thicken (optional)
Instructions:
  • Place all the ingredients into a slow cooker, then cover and cook on high for 4 hours.
  • Thicken excess liquid by sprinkling 1 tablespoon of cornflour in the last 15 minutes of cooking. Enjoy with cous cous, rice, or steamed vegetables.
