Slow cooker Moroccan chicken recipe

Prep in just 25 minutes for this flavorful slow-cooked Moroccan chicken.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 large red onion, cut into wedges
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm ground cinnamon
  • 5.00 gm smoked paprika
  • 1/2 tsp ground turmeric
  • 1 salt-reduced chicken stock pot
  • 2 carrots, thickly sliced
  • 1 large red capsicum, thickly sliced
  • 1 large zucchini, halved lengthways, thickly sliced
  • 6 skinless chicken thigh cutlets
  • 400g can cherry tomatoes in juice
  • 1/2 lemon, thinly sliced
  • 57.20 gm Pure Australian Honey
  • 125.00 ml pitted green olives
  • 125.00 ml fresh coriander sprigs
  • Cooked couscous, to serve
  • Lemon wedges, to serve
Instructions:
  • In a flameproof slow cooker bowl or frying pan, heat oil over medium-high heat. Add onion and cook for 3 minutes until charred. Stir in garlic and spices, and cook for 1 minute until fragrant.
  • Move everything to the slow cooker, including stock, carrot, capsicum, zucchini, chicken, and tomatoes. Top it with lemon slices and a drizzle of honey, then season with salt and pepper. Cover and cook on HIGH for 3 hours (or LOW for 6 hours). Add olives and cook for an additional 30 minutes on HIGH until chicken is fully cooked.
  • Garnish with fresh coriander sprigs and serve alongside couscous and additional lemon wedges.
