Zesty chermoula-marinated cod layered with onions, potatoes, and green bell pepper in a flavorful Moroccan fish tagine.
Ingredients:
  • 0.5 cup olive oil
  • 0.5 cup chopped fresh cilantro
  • 0.5 cup chopped fresh parsley
  • 0.5 lemon, juiced
  • 6 cloves garlic, minced
  • 1 teaspoon ground paprika
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground saffron
  • 1.5 pounds cod fillets, cut into bite-sized pieces
  • 1 large onion, cut into rings
  • 1 large carrot, peeled and cut into matchsticks
  • 2 potatoes, peeled and sliced 1/4-inch thick
  • 1 large green bell pepper, sliced into rings
  • 3 tomatoes, seeded and cut into strips
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Combine olive oil, cilantro, parsley, lemon juice, garlic, paprika, ginger, cumin, salt, and saffron in a spacious glass or ceramic bowl. Add cod and ensure it is fully coated. Refrigerate and marinate for 2 hours.
  • In a large pot or tagine, warm 1 tablespoon of olive oil. Arrange onion rings, carrot matchsticks, and potato slices in the pot. Place the marinated cod over the potatoes, then top it with green bell pepper rings and tomato strips. Sprinkle with 1/4 cup of cilantro and pour the remaining marinade over the top.
  • Simmer gently with the lid on until the potatoes are tender and the cod is flaky when tested with a fork, approximately 1 hour.
