Delicious Moroccan carrot and beet salad with raisins, spices, and honey lemon dressing.
Ingredients:
  • 2 cups grated carrots (from about 3 carrots)
  • 1 cup grated fresh beets (from about 1 medium sized peeled beet)
  • 1/2 cup golden raisins
  • 1/2 teaspoon paprika (sweet, not hot)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Small pinch salt
  • Small pinch cayenne
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • 2 tablespoons sliced fresh mint leaves
Instructions:
  • After grating the beets, rinse them briefly under cold water and pat dry. Combine them with grated carrots and raisins in a serving bowl, gently stirring to mix.
  • Prepare the dressing by whisking together paprika, cumin, cinnamon, salt, and cayenne in a small bowl. Add lemon juice and honey, continue whisking until smooth.
  • Coat the carrots and beets with the dressing and allow them to marinate for an hour. Serve chilled or at room temperature to let the flavors meld perfectly.
  • Add a couple tablespoons of sliced fresh mint leaves just before serving and garnish with more fresh mint.
