Quick, delicious, and satisfying six-ingredient meal!
Ingredients:
  • 600g lamb leg steaks
  • 160g packet Moroccan marinade
  • 200g packet citrus-flavoured couscous
  • 2 medium tomatoes, chopped
  • 3 green onions, thinly sliced
  • 60g baby rocket
Instructions:
  • Slice the lamb thinly against the grain, then place it in a glass or ceramic bowl. Add the marinade and toss well to coat. Let it marinate for 15 minutes.
  • Place couscous in a heatproof bowl and pour 320ml of boiling water over it. Let it sit uncovered for 5 minutes until the liquid is absorbed. Fluff the grains with a fork and let it cool for 5 minutes.
  • Skewer the lamb and cook in a lightly greased, hot frying pan for 3 to 4 minutes per side, until it reaches your preferred level of doneness. Cook in batches if necessary.
  • Combine tomato, onion, and rocket with the couscous mixture, making sure to toss gently to evenly distribute the ingredients. Serve the skewers with the flavorful couscous mixture.
