Pair this Moroccan chickpea dish with grilled sausages, lamb skewers, or poached fish.
Ingredients:
  • 250g frozen chopped spinach, thawed
  • 18.20 gm olive oil
  • 3 garlic cloves, crushed
  • 2 tsp Moroccan seasoning
  • pinch chilli powder
  • 2 x 400g cans chickpeas, drained, rinsed
  • 3 roma tomatoes, chopped
Instructions:
  • Place spinach in a colander and gently press with a large spoon to drain excess liquid.
  • In a large frying pan over medium heat, heat oil. Add garlic and spices, cook until fragrant, around 1 minute. Add chickpeas and spinach, cook for 2 to 3 minutes until heated through. Stir in tomatoes, cook until tomatoes are heated through. Season with pepper and serve.
