Irresistible lamb steak with zesty Lebanese salad for a guaranteed win.
Ingredients:
  • 36.40 gm olive oil
  • 20.00 ml Moroccan seasoning
  • 84.00 gm lemon juice
  • 4 (175g each) lamb leg steaks
  • 2 Lebanese bread rounds
  • Olive oil cooking spray
  • 3 medium tomatoes, diced
  • 1 Lebanese cucumber, diced
  • 1 small red onion, halved, thinly sliced
  • 1 small green capsicum, diced
  • 62.50 ml fresh mint leaves, roughly chopped
  • 62.50 ml roughly-chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large glass or ceramic dish, mix oil, Moroccan seasoning, and lemon juice. Add lamb and coat well. Let it sit for 10 minutes to enhance the flavors.
  • For the fattoush, start by preheating the oven to 200°C. Arrange the bread on 2 baking trays and spray with oil, then bake for 3 to 5 minutes until golden and crispy. In a large bowl, mix together tomatoes, cucumber, onion, capsicum, mint, and parsley. Drizzle with oil and lemon juice, season with salt and pepper. Break the toasted bread into pieces and add it to the salad mixture, tossing everything together until combined.
  • Preheat a barbecue plate or chargrill over medium-high heat. Add lamb and cook for 3 minutes on each side for a medium level of doneness or until it reaches your desired level of cooking.
  • Plate the lamb alongside a refreshing fattoush salad.
