Impress your family with flavorful roasted spiced chicken and crispy lemon potatoes.
Ingredients:
  • 6 Sebago potatoes, peeled, cut into wedges
  • 4 large Roma tomatoes, quartered
  • 2 lemons, rind finely grated, juiced
  • 4.80 gm salt flakes
  • 2 x 1.2kg whole chickens
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 5.00 gm sweet paprika
  • 1.25 gm ground cinnamon
  • 2 garlic cloves, crushed
  • Rocket leaves, to serve
Instructions:
  • Preheat the oven to 180C. Combine potatoes, tomatoes, lemon rind, salt flakes, and oil in a large dish. Ensure all vegetables are evenly coated. Transfer potatoes to a large roasting pan. Roast for 40 minutes. Then add tomatoes and roast for an additional 20 minutes, until potatoes are golden and tomatoes are tender.
  • First, wash and dry the chickens tenderly. Carefully cut along the sides of the backbone and remove it. Place the chickens on the kitchen counter and gently press on the breastbone to flatten them. Transfer the chickens to a spacious roasting pan.
  • 1. Preheat non-stick pan over medium heat, then sauté spices for 1 to 2 minutes until fragrant. Combine with 1/4 cup lemon juice and garlic in a bowl. Mix thoroughly and season chickens with the spice blend.
  • Roast the chickens until perfectly cooked, about 40 minutes. Serve the chicken alongside flavorful lemon potatoes, juicy tomatoes, and fresh rocket for a delightful meal.
