Try this quick and flavorful spiced chicken recipe, ideal for a speedy dinner option.
Ingredients:
  • 1 tablespoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 tablespoon vegetable oil
  • 2 cups water
  • 1 teaspoon vegetable oil
  • 1 1/2 cups uncooked couscous
  • 1/4 cup raisins, if desired
  • 1 small papaya, peeled, seeded and sliced
Instructions:
  • Mix a blend of paprika, salt, cumin, allspice, and cinnamon in a small bowl. Ensure both sides of the chicken are evenly coated with the spice mixture.
  • Heat 1 tablespoon of oil in a 10-inch skillet over medium heat. Cook the chicken for 15 to 20 minutes, turning once, until the juices run clear and the center reaches 170°F.
  • In a 2-quart saucepan, bring water and 1 teaspoon oil to a boil. Add couscous, remove from heat, cover, and let stand for 5 minutes. Fluff couscous, stir in raisins, and serve with chicken and papaya.
