Cuban-style black beans and rice cooked with flavorful chicken broth, tomatoes, onions, and herbs for amazing taste.
Ingredients:
  • 1 medium green pepper, diced
  • 0.5 large yellow onion, diced
  • 4 cloves garlic, minced
  • 0.25 cup crushed tomatoes
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.75 teaspoon dried thyme
  • 1 bay leaf
  • 1.3333333730698 (15 ounce) cans black beans, rinsed and drained
  • 2 cups uncooked long-grain white rice
  • 4 cups chicken stock
Instructions:
  • In a Dutch oven, heat oil over medium heat. Sauté bell pepper, onion, and garlic until onion is translucent, for about 5 minutes. Mix in crushed tomatoes and vinegar. Add cumin, salt, thyme, pepper flakes, and bay leaf. Cook for an additional 3 minutes.
  • Combine black beans and white rice in the pot. Pour in the chicken stock and bring to a boil. Lower the heat, cover the pot, and simmer for about 25 minutes until the rice is tender and has absorbed all the liquid; resist the urge to peek under the lid while cooking.
