Mortadella, tomato and provolone focaccia

Ingredients:
  • 1 x 300g focaccia bread, halved, split
  • 18.20 gm extra-virgin olive oil
  • 1 garlic clove, crushed
  • 60g baby rocket
  • 1 tomato, thinly sliced
  • 60g provolone cheese (see note), thinly sliced
  • 70g sliced mortadella
Instructions:
  • Grill or toast focaccia lightly. Mix oil and garlic, then brush over focaccia bases.
  • Layer rocket, tomato slices, provolone cheese, and mortadella on the bases. Season generously with salt and pepper before placing the focaccia tops on each sandwich. Serve and enjoy.
