Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Chocolate Chip Cookie Mix
  • 1 Cup Quick oats
  • 1 Cup melted butter
  • 4 cups miniature marshmallows
  • 50 caramels unwrapped
  • 1 (14 oz) can sweetened condensed milk
  • 1/4 cup butter
  • 1 tsp. vanilla
  • 1 (3.5 oz) bag butter flavored popcorn, popped
  • 1 Cup party peanuts
  • 1 Cup semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F and grease a 13x9x2 inch pan with non-stick cooking spray. Prepare popcorn as instructed on the package.
  • Combine the cookie mix, quick oats, and butter in a large mixing bowl using an electric mixer until a crumbly mixture forms. Press the mixture into a 13x9x2 inch pan and bake for 12 - 15 minutes or until the edges turn golden brown.
  • Sprinkle mini marshmallows over the warm crust and bake until they are puffed up, about 2 minutes.
  • In a 3-quart saucepan over gentle heat, blend caramels, sweetened condensed milk, butter, and vanilla, stirring until silky.
  • Spread popped popcorn in large roasting pan, ensuring to discard any unpopped kernels. Drizzle caramel mixture over popcorn and toss until well combined. Spread caramel-coated popcorn over marshmallows and sprinkle with peanuts, gently pressing down into the pan.
  • Melt chocolate chips in a small microwave-safe bowl on high for 1 minute. Stir well. If needed, microwave for another 30 seconds and stir until smooth. Drizzle the melted chocolate over the peanuts evenly.
  • Refrigerate for 1 hour before slicing into 30 bars.
