Elevate movie night with irresistible homemade caramel popcorn.
Ingredients:
  • 82.50 ml popping corn
  • 117.98 gm honey
  • 141.90 gm caster sugar
  • 60g butter, chopped
Instructions:
  • Prepare a 5cm-deep, 21cm x 30cm baking pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang at the long ends.
  • In a large saucepan over medium heat, warm the oil until 2 pieces of corn spin slowly in a circle. Add the rest of the corn and cover with a tight lid. Shake gently as the corn starts popping. Once the popping stops, remove from heat. Transfer to a large bowl, discarding any unpopped kernels.
  • In a saucepan over low heat, combine honey, sugar, and butter. Cook for 6 to 7 minutes until the sugar dissolves. Bring to a boil and cook without stirring for 5 to 6 minutes until light golden. Pour caramel over popcorn, mix, and transfer to a pan. Let it cool completely, then break into pieces and serve.
