Savory ground beef/pork, onions, tomatoes, peppers, and cabbage cooked together for a hearty one-pot dish.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 pound ground pork
  • 1 tablespoon Creole seasoning (such as Tony Cachere's®)
  • salt to taste
  • 1 head cabbage, cut into 2-inch squares
  • 0.5 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), or more to taste
Instructions:
  • In a large pot over medium heat, sizzle oil before tossing in onion, green pepper, and garlic. Sauté until beautifully caramelized, around 5 minutes. Introduce pork, Creole seasoning, and salt, cooking until the pork is golden, for 5 to 7 minutes. Resist the urge to drain the pan.
  • Lay cabbage on top of pork; pour diced tomatoes over. Cover with lid and simmer over medium heat. Let it cook undisturbed until cabbage wilts, for about 15 to 20 minutes. Stir gently and season to taste.
