Ms. Mary's Gluten-Free Banana Blueberry Bread

Delicious gluten-free banana blueberry bread, ideal for breakfast, snack, or dessert.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1 cup gluten-free all purpose baking flour (such as Bob's Red Mill®)
  • 1 cup quick oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 teaspoon ground cinnamon, or to taste
  • 2 cups mashed ripe bananas
  • 0.25 cup unsweetened almond milk
  • 0.5 cup blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • In a large bowl, cream together sugar and butter using an electric mixer until smooth. Mix in the egg and vanilla extract until light and fluffy.
  • In a medium bowl, combine sifted flour, oats, baking soda, salt, and cinnamon. Add this mixture to the sugar mixture and combine well. Blend in mashed bananas and almond milk, then gently fold in blueberries. Transfer the batter into the prepared loaf pan.
  • Bake until the top of the loaf springs back when lightly pressed, about 35-40 minutes in the preheated oven. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
