Muffin pan cheddar crumbly puffs

Cheesy cheddar bombs coated in crispy McVities biscuits - irresistible party appetizers that are easy, quick, and utterly addictive.
Ingredients:
  • 10 McVitie’s Original Digestive biscuits
  • 250ml (1 cup) milk
  • 2 eggs
  • 160g (2 cups) coarsely grated cheddar
  • 225g (1 1/2 cups) self-raising flour
  • 4.00 gm baking powder
  • 1.20 gm salt
  • 40g (1/2 cup) finely grated parmesan
Instructions:
  • Preheat your oven to 200C (180C fan forced) and generously grease twelve 80ml (1/3 cup) muffin pans.
  • Pulse biscuits in a food processor until they become fine crumbs. Sprinkle 1 tsp of biscuit crumbs into each pan, saving the rest for later. Swirl the pans to coat with crumbs and tap out any extra.
  • In a large bowl, combine milk and eggs, then mix in cheddar, flour, baking powder, salt, half of the parmesan, and half of the remaining biscuit crumbs until just blended.
  • Spread mixture evenly into the pans. Sprinkle with the rest of the parmesan and biscuit crumbs. Bake until golden brown, about 20 minutes. Let it cool in the pan for 5 minutes before transferring to a serving plate. Enjoy warm.
