Create savory potato cheese muffins by mixing grated potato, cheese, butter, and garlic, then bake until golden perfection. A delicious, comforting snack awaits.
Ingredients:
  • 750g (about 4) coliban potatoes, washed
  • 50g butter
  • 1 brown onion, peeled, thinly sliced
  • 1 garlic clove, finely chopped
  • 1 tsp finely chopped fresh rosemary leaves, plus extra (optional), to sprinkle
  • 80g (1 cup) pre-grated 3 cheese blend
Instructions:
  • Pierce the potatoes all over with a fork and place on a microwave-safe plate. Microwave on High for 10 minutes or until partially cooked. Allow to cool before handling.
  • In a saucepan over medium heat, gently melt the butter. Add the onion and simmer on low, stirring occasionally, for 5 minutes until softened but not browned. Introduce the garlic and continue to cook, stirring frequently, for 1 minute until fragrant. Set aside.
  • Preheat the oven to 180C/160C fan forced. Coarsely grate the potato and mix it with the onion and rosemary. Season generously and fold in half of the cheese.
  • Prepare a 6-hole 80ml (1/3-cup) capacity muffin pan by greasing it with oil. Fill each muffin hole with the potato mixture, pressing down firmly with a spoon. Top with the remaining cheese and bake until golden, about 25 minutes.
  • Gently separate the fricos with a round-bladed knife and garnish with extra rosemary, if desired.
