Muffin pan Irish potato pies recipe

Delicious individual Irish potato pies baked in a muffin pan with crispy homemade pastry filled with layers of potato, bacon, cheese, egg, and cream. Full of flavor and easy to make with storebought pastry. The ultimate comfort food in each bite.
Ingredients:
  • 185g (1 1/4 cups) plain flour, plus extra to dust
  • 100g butter, chilled, chopped, plus 10g, extra
  • 2-60.00 gm iced water
  • 4 streaky bacon rashers, finely chopped
  • 2 tsp fresh thyme leaves
  • 350g desiree potatoes
  • 70g (2/3 cup) grated cheddar cheese
  • 125ml (1/2 cup) thickened cream
Instructions:
  • Preheat the oven to 190C/170C fan forced and lightly grease a 6-hole (150ml capacity) muffin pan.
  • In a food processor, combine flour and butter, pulsing until it resembles breadcrumbs. Pour in 2 ½ tbsp of iced water and pulse again until the mixture forms clumps of dough, adding more water as needed.
  • On a clean surface, shape the dough into a ball, then divide it into 6 equal portions. Roll out each portion on a floured surface into a 14cm round. Gently line each muffin hole with the pastry, allowing it to extend about 1cm above the rim.
  • Place a sheet of baking paper over the pastry cases. Fill them with dried beans or rice. Bake for 10 minutes. Remove the beans or rice along with the paper. Allow the pastry cases to cool.
  • In a frying pan over medium heat, melt an additional 10g of butter. Cook the bacon until it just starts to color, about 3 minutes. Add the onion and cook until soft and lightly golden, about 4 minutes. Stir in the thyme and transfer to a plate to cool.
  • Slice the potatoes thinly. Layer slices in pastry shells with bacon mixture and a sprinkle of cheese. Continue layering potato, bacon, and cheese, saving some cheese for the tops. Embrace the rustic look – neatness not required!
  • Combine the cream and egg in a bowl and gently pour over the filling, dividing equally between the pies. Sprinkle the reserved cheese on top. Bake for 30 minutes, or until the potato is tender and the tops are golden brown. Serve the pies warm.
