Veggie and cheese packed muffin tin frittatas: ideal for busy mornings or brunch gatherings.
Ingredients:
  • 1 cup chopped fresh asparagus
  • 0.25 cup chopped green bell pepper
  • 2 tablespoons chopped red onion
  • 6 eggs
  • 0.5 cup milk
  • 0.125 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and coat a 12-cup muffin tin with cooking spray.
  • Heat olive oil in a skillet over medium heat. Sauté asparagus, green bell pepper, and onion until softened, for 5 to 10 minutes.
  • Combine eggs, milk, salt, and black pepper in a bowl. Gently fold in cooked vegetables and Cheddar cheese. Distribute about 1/4 cup of mixture into each muffin cup.
  • Bake in a preheated oven until the frittatas are cooked through in the center and have a nice light brown color, approximately 20 minutes.
