Mujaddara Arabic Lentil Rice

Savory lentils and rice flavored with cumin, garlic powder, and crispy fried onions.
Ingredients:
  • 1 cup dry lentils, rinsed
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 0.75 cup white rice, rinsed
  • 0.75 cup water
  • 0.25 cup vegetable oil
  • 3 white onions, sliced into 1/4-inch rings
Instructions:
  • In a pot over medium heat, simmer lentils with 2 cups of water, 1 teaspoon of salt, cumin, and garlic powder until lentils begin to soften, about 20-30 minutes.
  • Combine the rice, 3/4 cup water, 1 teaspoon salt, and olive oil with the lentils, stir well, cover, and simmer until tender for about 40 minutes.
  • In a skillet over medium heat, sauté the onions in cooking oil until golden brown, for 7 to 10 minutes. Serve by spreading the caramelized onions over the rice and lentil mixture.
