Moist and tender quick bread with chopped dates, perfect for holiday gifting. Optional: swap with raisins.
Ingredients:
  • 1.5 cups chopped pitted dates
  • 1.5 cups white sugar
  • 2 tablespoons butter
  • 1.5 cups boiling water
  • 1 egg, lightly beaten
  • 2.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1.5 teaspoons vanilla extract
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease and flour a 9x5 inch loaf pan.
  • Combine dates, sugar, salt, and butter in a bowl, pour boiling water, stir, and let it cool. Gently mix in the egg when cooled.
  • Combine flour, baking soda, and cream of tartar in a bowl. Add raisin mixture and mix until fully combined. Fold in vanilla extract and walnuts, if using. Transfer batter to the prepared loaf pan.
  • Bake in a preheated oven until a knife inserted in the center comes out clean, approximately 1 hour and 15 minutes. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Wrap the cake in aluminum foil and refrigerate for storage.
