Impress with this flavorful Asian salad featuring mushrooms, black fungus, and fennel.
Ingredients:
  • 30g black fungus
  • 1 small fennel bulb, thinly sliced
  • 120g button mushrooms, sliced
  • 40g baby spinach
  • 250.00 ml thinly sliced spring onions
  • 62.50 ml mint leaves
  • Toasted sesame seeds, to serve
  • 60ml olive oil
  • 42.00 gm lemon juice
  • 42.00 gm light soy sauce
Instructions:
  • Place the black fungus in a bowl of boiling water for 5 minutes to rehydrate. Then drain and set aside.
  • Mix together the oil, lemon juice, and soy sauce in a bowl to create the dressing.
  • In a bowl, mix together black fungus, fennel, sliced mushroom, baby spinach, spring onion, and mint. Drizzle with salad dressing and toss gently. Finish with a sprinkle of toasted sesame seeds before serving.
