Mushroom and kale pasta tray bake recipe

45-minute Vegetarian Tray Bake with mushrooms, lasagne sheets, kale, and feta. Deliciously healthy!
Ingredients:
  • 200g swiss brown mushrooms, halved
  • 1 red capsicum, cut into thick strips
  • 250g cherry tomatoes, halved
  • 3 garlic cloves, sliced
  • 36.40 gm extra virgin olive oil
  • 10.00 gm smoked paprika
  • 1 tsp dried chilli flakes
  • 4 fresh lasagne sheets
  • 423.30 gm vegetable liquid stock
  • 1/2 bunch kale, stems and centre veins discarded, leaves roughly torn
  • 60g reduced-fat fetta, crumbled
Instructions:
  • Preheat your oven to 200C (180C fan-forced).
  • Place mushrooms, capsicum, tomatoes, and garlic in a large roasting pan. Drizzle with oil, sprinkle with smoked paprika and chili flakes, season with salt and pepper, and toss well to combine. Roast for 20 minutes in the oven.
  • - Tear pasta into rustic 10cm pieces. Combine with stock and roast vegetables in a pan. Mix gently. Add kale on top. Bake for 10 to 15 minutes until pasta is al dente. Toss lightly. Sprinkle with crumbled feta. Serve and enjoy!
