Mushroom bolognaise with spaghetti

Satisfy the family with this delicious mushroom bolognese!
Ingredients:
  • 1 brown onion, finely chopped
  • 500g cup mushrooms, finely chopped
  • 70g tomato paste
  • 125ml red wine
  • 60ml vegetable stock
  • 2 x 400g cans diced tomatoes
  • 400g spaghetti
  • Flat-leaf parsley leaves, to serve
  • Basil leaves, to serve
  • Shaved parmesan (or vegetarian hard cheese), to serve
Instructions:
  • In a large deep frying pan over high heat, heat oil. Sauté onion and garlic until onion is soft, about 3 minutes. Add mushrooms and cook until browned, about 5-6 minutes. Stir in tomato paste, then pour in red wine and stock. Bring to a boil and simmer until liquid is reduced by half, about 2-3 minutes.
  • Place the tomato into the pan, season it, then reduce the heat to low. Let it simmer for 25 minutes, or until the sauce thickens to perfection.
  • Cook the pasta in a saucepan of boiling water according to package instructions. Drain the pasta and cover to keep warm.
  • Serve the pasta and mushroom bolognaise in individual bowls and garnish generously with fresh parsley, basil, and grated parmesan or vegetarian hard cheese.
