Spicy sausage adds a flavorful twist to this simple Alfredo mushroom lasagna with convenient jarred sauce and no-boil noodles.
Ingredients:
  • nonstick cooking spray
  • 6 (3.5 ounce) links hot Italian sausage links, casings removed
  • 2 large onions, sliced
  • 1 (16 ounce) package sliced fresh mushrooms
  • 1 (10 ounce) package fresh spinach
  • 1 (16 ounce) container part-skim ricotta cheese
  • 1 large egg, beaten
  • 2 (15 ounce) jars Alfredo sauce
  • 1 (8 ounce) package no-boil lasagna noodles
  • 1 (16 ounce) package shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C). Grease a 10x15-inch baking dish and slice the sausage links.
  • In a large skillet over medium heat, brown the sausage and onions until the sausage is fully cooked, for about 5 to 7 minutes. Then, add the mushrooms and cook until they are soft and browned, about 5 minutes. Remove the skillet from the heat and drain any excess grease.
  • In a medium bowl, microwave spinach uncovered for 3 1/2 minutes. Add ricotta cheese and beaten egg, then mix thoroughly until combined.
  • In a medium bowl, blend Alfredo sauce and milk until smooth and creamy.
  • Start by spreading a layer of 1/2 cup sauce on the bottom of the baking dish. Next, add 3 uncooked noodles on top of the sauce. Then, layer with 1/2 of the spinach mixture, followed by 1/2 of the sausage mixture. Sprinkle 1/3 of the mozzarella cheese on top. Add another layer of 3 noodles and pour 1 1/2 cups of sauce over them. Continue by spreading the remaining spinach mixture, then the remaining sausage mixture. Sprinkle with another 1/3 of mozzarella. Add the final layer of 3 noodles, pour the remaining sauce evenly, and top with the remaining mozzarella.
  • Coat a sheet of aluminum foil with cooking spray and use it to tightly cover the dish, sprayed-side down.
  • Place in the preheated oven for 45 minutes. Uncover and bake until noodles are tender and lasagna is bubbly, for an additional 10 to 15 minutes. Rest for 10 minutes before serving.
