Indulge in a savory Italian mushroom lasagna with cheesy turkey sausage - a delightful dinner choice.
Ingredients:
  • 1 lb Italian turkey sausage, casings removed
  • 1 jar (26 oz) basil-and-tomato pasta sauce
  • 2 jars (4.5 oz each) sliced mushrooms, drained
  • 1 container (32 oz) reduced-fat ricotta cheese
  • 1 egg, slightly beaten
  • 2 tablespoons parsley flakes
  • 1 tablespoon grated Parmesan cheese
  • 10 uncooked lasagna noodles
  • 4 cups shredded mozzarella cheese (16 oz)
  • Chopped fresh parsley, if desired
Instructions:
  • Preheat your oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a large nonstick skillet, sauté the sausage over medium-high heat for 8 to 10 minutes, stirring occasionally until it's no longer pink. Drain off any excess grease, then mix in the pasta sauce and mushrooms before setting it aside.
  • Combine ricotta cheese, egg, 2 tablespoons parsley flakes, Parmesan cheese, and salt in a medium bowl, stirring until well mixed.
  • Begin by elegantly laying out 5 uncooked noodles in a single, inviting layer in your baking dish. Follow this with a luxurious layer of half of the sausage mixture, a generous spread of half of the ricotta mixture, and a decadent sprinkle of 2 cups of the finest mozzarella cheese. Repeat these mesmerizing layers with care and precision.
  • Cover and bake for 55 minutes until bubbly. Uncover and bake for an additional 10 to 15 minutes. Let it stand for 10 minutes before cutting, then sprinkle with chopped fresh parsley.
