Spicy Sausage and Peppers Over Rice

Delicious turkey sausage, bell pepper, and brown rice dish - easy enough for anyone to cook!
Ingredients:
  • 1 cup brown rice
  • 2 turkey sausage links, cut into 1-inch pieces
  • 1 tablespoon minced garlic, or to taste
  • 0.75 red onion, diced
  • 1 green bell pepper, sliced
  • 0.75 cup vegetable or chicken broth
  • 1 cup grape tomatoes
  • 2 tablespoons diced pimento
  • crushed red pepper flakes to taste
  • Cajun seasoning to taste
  • black pepper to taste
Instructions:
  • Combine brown rice and water in a small saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, about 40 minutes.
  • Heat a skillet over medium-high heat. Cook turkey sausage until browned on the outside and no longer pink inside. Remove sausage. Add garlic and onion to the skillet. Cook until onion softens and turns translucent. Stir in green pepper and cook for 2 minutes.
  • Add half of the vegetable stock to the pot with the tomatoes and pimiento. Season with red pepper flakes, Cajun seasoning, and pepper to your liking. Cook until most of the liquid has cooked off. Stir in sausage and the rest of the vegetable broth. Simmer until heated through. Serve the sausage mixture over brown rice.
