This One-Pot Sausage and Peppers Rice Cooker Meal Makes Dinner Too Easy

Viral rice cooker recipe: Spicy sausage, rice, broth, and veggies cook together for a delicious 35-minute meal. Just set it and forget it!
Ingredients:
  • 3/4 cup uncooked long-grain white rice
  • 3/4 cup chicken broth
  • 3/4 cup canned fire-roasted diced tomatoes (from 1 [ 14.5-oz.] can)
  • 2 medium garlic cloves, finely chopped (about 2 tsp.)
  • 2 tsp. Creole seasoning (such as Tony Chachere’s)
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper (optional)
  • 1 cup chopped green bell pepper (from 1 small 7 oz. pepper)
  • 1/3 cup chopped white onion (from 1 small 6 oz. white onion)
  • 6 oz. andouille sausage, sliced into 1/4-inch-thick coins (about 1 1/4 cups)
  • Sliced scallions
Instructions:
  • Assemble all ingredients.
  • Rinse the rice under cold running water until the water runs clear for about 1 minute. Drain thoroughly and place it in the rice cooker bowl.
  • Combine broth, tomatoes, garlic, Creole seasoning, pepper, and optional cayenne, stirring until well mixed.
  • Create a vibrant base with chopped bell pepper and onion, then add slices of flavorful sausage on top.
  • Add rice cooker bowl to the rice cooker, turn it on, and cook following the manufacturer's instructions until it automatically turns off.
  • Gently transfer the rice from the rice cooker to a bowl, fluff it with a fork, and mix all ingredients together.
  • Steam the bowl contents by covering with a lid or plate for 5 minutes to enhance flavors.
  • Divide the fragrant rice among two bowls and top with fresh sliced scallions for a pop of color and flavor.
