Try this mouthwatering Italian shoemaker's chicken tray bake with flavorful sausage, for a simple and delicious one-pan meal. Just toss everything together and bake to perfection!
Ingredients:
  • 1 brown onion, halved, thinly sliced
  • 1.5kg skin-on chicken thigh cutlets, excess skin removed, skin scored
  • 4 Italian sausages, casings discarded
  • 60ml (1/4 cup) white wine
  • 125ml (1/2 cup) chicken style liquid stock
  • 280g btl chargrilled peppers, drained, coarsely chopped
  • Fresh basil leaves, to serve (optional)
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Spread onions in a 19cm x 26cm ceramic dish, then layer chicken on top and season. Crumble sausage around chicken. Bake for 25 minutes, or until chicken is lightly golden.
  • Pour the wine and stock into the dish and let it simmer without a lid for another 25 minutes, or until the chicken achieves a golden hue.
  • Combine the peppers with the chicken, then garnish with basil before serving, if desired.
