Pepper & chicken jalfrezi traybake

Effortlessly delicious one-tray jalfrezi-inspired chicken using curry paste and onion marmalade for bold flavors. Oven-baked for tender, succulent thighs and vibrant colors.
Ingredients:
  • 4 chicken thighs skin on, bone in
  • olive oil
  • 8 cloves of garlic
  • 2 fresh green chillies
  • 3 red peppers
  • 8 fresh bay leaves
  • 1 heaped tablespoon jalfrezi curry paste
  • 2 tablespoons onion marmalade
  • red wine vinegar
  • 4 tablespoons natural yoghurt
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Place a 25cm x 35cm roasting tray on medium heat. Season chicken thighs with salt and pepper, then place in the tray skin side down with olive oil. Add peeled garlic cloves, halved and deseeded chillies, and quartered, deseeded peppers. Once chicken is golden, mix in bay leaves, jalfrezi paste, and onion marmalade. Cook for 5 minutes, add red wine vinegar, then bake for 45 minutes. Mash garlic into juices, swirl in yoghurt, and serve.
