Ingredients:
  • 2 tsp coriander seeds
  • 1/2 tsp garam masala
  • 1/4 tsp ground white pepper
  • 1.20 gm salt
  • 18.40 gm vegetable oil
  • 1 onion, halved and thinly sliced
  • 3 cloves garlic, peeled, sliced
  • 5cm piece fresh ginger, grated
  • 2 large red chillies, seeded and finely chopped
  • 200g chicken breast
  • 1 tomato, halved, seeded and cut into thin wedges
  • 2 bunches English spinach, trimmed
  • 250.00 ml fresh coriander leaves
Instructions:
  • In a heavy-based frying pan over medium heat, toast coriander seeds, garam masala, and pepper until fragrant. Grind the spices in a mortar and pestle with salt.
  • Heat oil in a hot wok. Sauté onion and garlic until translucent. Mix in spices, ginger, and chili for 1 minute. Stir in chicken and cook for 8 minutes until done. Add tomato and heat through. Take off the heat.
  • Fill a heatproof bowl with spinach. Pour boiling water over the spinach, then drain and rinse with cold water. Divide the spinach among serving plates, layer with pepper chicken, and garnish with coriander.
