Delicious meal prep with sweet tomatoes and peppers balancing spicy sauce and sausage.
Ingredients:
  • 2 cups brown rice rotini pasta
  • 1 cup rotini pasta
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 yellow bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 medium sweet onion, cut into thin strips
  • 3 links Hot Italian sausage
  • 14.5 oz can diced tomatoes
  • 1/2 cup tomato sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup heavy whipping cream
  • 1/2 cup reserved pasta water
Instructions:
  • Bring a pot of salted water to a boil. Cook rotini until al dente, about 8 minutes. Reserve 1/2 cup pasta water before draining.
  • In a heavy skillet over medium heat, melt butter with olive oil. Sauté bell pepper, onion, and garlic until softened, about 4-5 minutes. Add Italian sausage, diced tomatoes, and tomato sauce. Mix well, cover, and simmer for 15 minutes.
  • Cut sausage links diagonally into coin slices, then return them to the skillet. Season with basil, garlic granules, and crushed red pepper flakes. Stir well and add heavy cream and reserved pasta water. Cover and simmer sauce for 8 minutes.
  • Plate the cooked rotini and generously ladle the sauce over the top before serving.
