Spicy sausage and rice casserole with tomatoes, onions, and bell peppers - a simple, flavorful dinner delight.
Ingredients:
  • 28 ounces fresh, ground spicy pork sausage
  • 1 cup uncooked long-grain rice
  • 1 slice onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can whole peeled tomatoes, crushed
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a sizzling skillet, cook and crumble sausage until nicely browned; drain any excess grease. Add rice, onion, garlic, and peppers; stir and cook for 5 minutes. Mix in tomatoes, chicken broth, salt, pepper, and cayenne pepper. Transfer this flavorful mixture into a 9x13-inch baking dish.
  • Cook in the oven until the rice is tender and most of the liquid is absorbed, approximately 1 hour.
