Delicious turkey sausage and pepper skillet - perfect for a quick weeknight meal!
Ingredients:
  • 2 tablespoons olive oil, divided
  • 4 sweet Italian turkey sausage links (such as Jennie-O®)
  • 1 large red onion, chopped
  • 1 red bell pepper, cut into 1 1/2-inch chunks
  • 1 green bell pepper, cut into 1 1/2-inch chunks
  • 3 cloves garlic, minced
  • 0.5 teaspoon crushed red pepper, or more to taste
Instructions:
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Cook the turkey sausages until they develop a golden-brown crust and become firm, about 3 to 4 minutes per side. Transfer the sausages to a cutting board to cool slightly before slicing diagonally into 1/2-inch thick pieces; they will still be slightly undercooked at this stage.
  • In the same skillet, heat the remaining tablespoon of oil over high heat. Sauté the onion until lightly browned, about 1 minute. Add the peppers and cook over high heat, stirring constantly, until they start to brown, 2 to 3 minutes. Ensure not to overcrowd the skillet for optimal charring. Stir in the garlic and cook for another minute.
  • Add the sausage back to the skillet with all the flavorful juices. Sprinkle in crushed red pepper, salt, and pepper to taste, and lower the heat to medium. Stir well to mix everything together and cook until the sausage is fully cooked through, about 2 more minutes.
