Quick and easy vegan stroganoff with oyster mushrooms and creamy non-dairy milk, ready in 20 minutes.
Ingredients:
  • 8 ounces oyster mushrooms
  • 1 tablespoon oil, or to taste
  • 1 small onion, diced
  • 1 tablespoon all-purpose flour
  • 1 cup almond milk
  • salt and ground black pepper to taste
Instructions:
  • Flake mushrooms with a fork.
  • In a skillet over medium-high heat, sizzle mushrooms and onions until soft, about 2 to 3 minutes. Sprinkle in flour, mix thoroughly, and cook for an additional minute.
  • Combine creamy almond milk with tangy lemon juice until thoroughly mixed. Let it simmer for 7 to 8 minutes, then season with a pinch of salt and freshly ground pepper to elevate the flavors.
