Mushroom stroganoff

Vegetarian twist on classic stroganoff, perfect comfort food for winter nights.
Ingredients:
  • 3.75 gm ground paprika
  • 1/4 tsp chilli powder
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 600g button mushrooms, sliced
  • 77.55 gm light sour cream
  • 62.50 ml 99% fat-free plain yoghurt
  • 40.00 ml flat-leaf parsley, finely chopped, plus extra to serve
  • oil spray
Instructions:
  • Coat a large frying pan with oil and sauté onion over medium heat for 6-8 minutes until soft. Stir in spices and garlic for 1 minute. Toss in mushrooms and cook for 7-8 minutes until tender.
  • Combine the sour cream and yogurt until smooth. Fold in the chopped parsley and season to your liking.
  • Garnish stroganoff with additional parsley leaves before serving.
