Classic mushy peas, ideal for pairing with roast dinners or savory beef pies.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, halved, coarsely chopped
  • 450g (3 cups) frozen baby peas, thawed
  • 80ml (1/3 cup) thin cream
  • 80ml (1/3 cup) vegetable liquid stock
  • Salt & freshly ground black pepper
Instructions:
  • In a saucepan over medium-high heat, sauté onion in oil until slightly golden, about 5-6 minutes. Stir in peas, cream, and stock. Bring to a boil, then simmer on low for 2-3 minutes until sauce thickens. Remove from heat and lightly mash. Season with salt and pepper to taste.
  • Arrange peas elegantly on individual serving plates.
