Mussels with garlic & chilli

Ingredients:
  • 18.20 gm olive oil
  • 3 garlic cloves, crushed
  • 1 small fresh red chilli, deseeded, finely chopped
  • 250ml (1 cup) vegetable liquid stock
  • 20 black (local) mussels, scrubbed, debearded
  • 250.00 ml chopped fresh curly parsley
  • 1/2 loaf crusty bread, sliced, to serve
Instructions:
  • In a wok or large saucepan, heat oil over high heat. Stir in garlic and chili, cook until aromatic for about 30 seconds. Pour in stock, bring to a boil, then lower the heat to medium and simmer uncovered for 3 minutes.
  • Add the mussels to the wok or pan, cover, and cook for 5 minutes, shaking occasionally until they open. Remove any unopened mussels before serving.
  • Mix parsley into mussels and sauce. Divvy up mussels into bowls and drizzle with leftover sauce. Serve with crusty bread.
