Flavorful Asian mussels ready in under 30 minutes - a delicious and healthy meal!
Ingredients:
  • 5cm piece ginger, peeled, finely shredded
  • 1 garlic clove, thinly sliced
  • 1/2 tsp Chinese five spice
  • 6 green onions, trimmed, thinly sliced
  • 125ml chicken stock
  • 60ml shao hsing wine
  • 42.00 gm dark soy sauce
  • 16.00 gm brown sugar
  • 2 kg black mussels, scrubbed, de-bearded
  • 9.20 gm peanut oil
  • 2 bunches choy sum, trimmed
  • Steamed jasmine rice, to serve
Instructions:
  • In a sizzling wok, infuse the oil with ginger, garlic, five spice, and a generous portion of green onions. Stir vigorously for 1 minute until the aroma is irresistible. Pour in the stock, wine, soy sauce, and sugar, allowing the flavors to bubble up. Introduce the mussels and let them simmer covered for 3-4 minutes, discarding any that remain closed. Finally, transfer this delectable concoction to a spacious bowl.
  • Heat up the peanut oil in a hot wok. Stir-fry the choy sum until it wilts, about 2-3 minutes.
  • Divide the choy sum among shallow serving bowls. Arrange mussels on top and drizzle with cooking liquid. Garnish with the rest of the green onions. Serve promptly with steamed jasmine rice.
