Mustard Mousse for Ham

Festive gelatin mold complements holiday ham. Sweet, tangy, creamy perfection.
Ingredients:
  • 1 (.25 ounce) envelope unflavored gelatin
  • 2 tablespoons cold water
  • 0.75 cup white sugar
  • 0.25 cup mustard powder
  • 0.5 teaspoon salt
  • 0.66666668653488 cup apple cider vinegar
  • 0.33333334326744 cup water
  • 4 eggs
  • 1 cup whipping cream
Instructions:
  • First, combine the gelatin and 2 tablespoons of cold water until dissolved. Next, blend the gelatin mixture with sugar, mustard, salt, vinegar, and 1/3 cup of water until smooth. Finally, add the eggs and blend until the mixture is smooth.
  • Create a double boiler by placing a mixing bowl over boiling water. Pour in the mustard mixture and cook while stirring until it thickens to a custard-like consistency. Remove from heat and let it cool completely.
  • Using an electric mixer, whip the cream in a separate bowl until soft peaks form. Gently fold the whipped cream into the mustard mixture. Lightly grease a 1 quart ring mold and pour the mixture into it. Chill in the refrigerator overnight. Serve with ham.
