BBQ brussels sprout and bacon skewers

Try these irresistible grilled Brussels sprout and bacon skewers for easy entertaining.
Ingredients:
  • 400g baby brussels sprouts
  • 3 middle bacon rashers
  • 20.00 ml white wine vinegar
  • 11.80 gm wholegrain mustard
  • 7.20 gm honey
  • 2 tsp thyme sprigs
  • Chargrilled lemon halves, to serve
Instructions:
  • Preheat barbecue grill or chargrill to medium-high. Boil brussels sprouts in a large pot for 2 minutes until tender. Refresh in cold water, then drain well.
  • Peel off the bacon rind using a small sharp knife. Cut the bacon in half lengthwise and then crosswise. Roll each piece of bacon into a roll and thread onto soaked bamboo skewers along with brussels sprouts.
  • In a screw-top jar, combine oil, vinegar, mustard, honey, and thyme. Shake well. Brush the mixture over the skewers. Grill, turning occasionally, for 5 minutes or until lightly charred. Transfer to a serving platter and serve with lemon.
