Ingredients:
  • 2 free-range egg yolks
  • 1 heaped teaspoon Dijon mustard
  • 500 ml mixed oils
  • 1-2 tablespoons white wine vinegar
  • ½ lemon
Instructions:
  • In a bowl, whisk the egg yolks with mustard. Slowly drizzle in half of the oil while whisking continuously for 3 to 5 minutes until thickened. Mix in 1 tablespoon of vinegar to slightly loosen the mixture. Slowly add the rest of the oil while whisking. Season with salt, lemon juice, and more vinegar if desired. Store in a jar in the fridge for up to a week.
