Create a flavorful and moist meatloaf using a blend of ground beef, pork sausage, veggies, and seasonings for a classic homemade dish.
Ingredients:
  • 2 Tbsp unsalted butter
  • 1 cup finely chopped onion
  • 1 celery ribfinely chopped
  • 1 carrotfinely chopped
  • 1/2 cup finely chopped green onion, including the green onion greens
  • 3 cloves garlic, minced (about 1 Tbsp)
  • 2 teaspoon salt (use 1 1/2 teaspoons if using Italian sausage)
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons Worcestershire sauce
  • 2/3 cup ketchup, divided 1/3 and 1/3
  • 1 1/2 pounds of ground beef (chuck)
  • 3/4 pound of spicy ground pork sausage or Italian sausage (a mix of sweet and hot if you are using links)
  • 1 cup fresh bread crumbs (take a couple slices of fresh bread and pulse in a blender until you have crumbs)
  • 2 large eggs, beaten slightly
  • 1/3 cup minced fresh parsley leaves
Instructions:
  • Preheat the oven to 350°F and place a rack in the center.
  • In a large skillet over medium heat, melt butter until foamy. Add chopped onions, celery, carrot, green onions, and garlic. Cook for 5 minutes, stirring occasionally. Cover and cook for another 5 minutes until carrots are tender. Season with salt and pepper, then stir in Worcestershire sauce and half the ketchup. Cook for 1 minute before removing from heat to cool.
  • Combine the cooled vegetables with ground beef, Italian sausage, eggs, breadcrumbs, and parsley in a large bowl. Use your very clean hands to mix until everything is evenly distributed.
  • Spread the meatloaf mixture in a loaf pan, pressing it down firmly. Alternatively, shape the mixture into a loaf on a baking pan. Spread the remaining ketchup on top.
  • Bake the meatloaf at 350°F for 1 hour, or until a meat thermometer inserted into the center reads 155°F. Let it rest for 10 minutes before transferring to a serving plate using a metal spatula.
  • To enjoy, slice the meatloaf thickly. For delicious leftovers, simply chill and reheat. Enjoy slices in sandwiches too!
