Puerto Rican-inspired stuffed turkey legs, a sentimental favorite honoring my dad.
Ingredients:
  • 4 turkey legs
  • 1 cup olive oil
  • 2 green bell peppers
  • 1 large white onion
  • 2 tablespoons salt
  • 1 pinch ground black pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons distilled white vinegar
  • 5 slices bacon
  • 2 tablespoons teriyaki sauce
Instructions:
  • Score the turkey legs multiple times vertically.
  • Mix together olive oil, salt, pepper, teriyaki sauce, vinegar, and oregano in a small bowl. Add turkey legs and coat them with the marinade. Allow them to marinate while you prepare the vegetables and bacon.
  • Dice the onion, green pepper, and bacon into small squares, aiming for pieces that are roughly the same size as the slits in the legs.
  • Stuff each cut with a piece of pepper, onion, and bacon.
  • Once the legs are stuffed, sear them in the flavorful oil blend over medium-high heat for 5 minutes. Lower the heat to low, cover, and simmer for 40 to 45 minutes, or until the meat begins to easily pull away from the bone. If the legs appear to be drying out during the cooking process, simply introduce a small amount of water to the skillet and decrease the heat.
