Try this delightful twist on classic meatloaf: turkey meatloaf stuffed with gooey mozzarella and nutritious spinach.
Ingredients:
  • cooking spray (such as Pam®)
  • 1 pound ground turkey
  • 0.375 cup Italian-seasoned bread crumbs
  • 0.5 onion, diced
  • 2 tablespoons ketchup
  • 1 large egg
  • 1 pinch garlic powder, or to taste
  • 1 pinch onion powder, or to taste
  • 0.75 cup shredded mozzarella cheese
  • 1 ounce chopped baby spinach
  • 2 tablespoons Worcestershire sauce
  • 1.5 teaspoons Dijon mustard
  • 1 teaspoon brown sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and generously spray a baking sheet with cooking spray.
  • Combine the turkey, bread crumbs, onion, ketchup, egg, salt, garlic powder, and onion powder in a large mixing bowl.
  • Lay out the meat mixture on a sheet of parchment paper to create a square or rectangle shape. Add mozzarella cheese and spinach on half of the meat mixture, then fold the other half over gently. Press together and shape into a log before transferring to a baking sheet.
  • Cook in the oven at the set temperature for 35 minutes.
  • Combine ketchup, Worcestershire sauce, Dijon mustard, brown sugar, and garlic powder in a bowl for the glaze.
  • Take the meatloaf out of the oven, generously pour the glaze over it. Place it back in the oven and bake for an additional 10 to 15 minutes until fully cooked in the center, reaching an internal temperature of at least 160 degrees F (70 degrees C). Allow it to rest for 5 minutes before serving.
