Healthy turkey spinach meatloaf with mushrooms, cheese, egg whites, and oats - a delicious, nutritious family dinner option.
Ingredients:
  • cooking spray
  • 1 cup coarsely chopped mushrooms
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.5 cup shredded part-skim mozzarella cheese, divided
  • 0.25 cup grated Parmesan cheese
  • 1 pound 99%-lean ground turkey breast
  • 0.75 cup Quaker® Oats (Quick or Old Fashioned, uncooked)
  • 0.5 cup fat-free milk
  • 1 egg white, lightly beaten
  • 1 teaspoon dried Italian seasoning blend
  • 0.25 teaspoon black pepper
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Grease skillet lightly with cooking spray and heat on medium-low. Sauté mushrooms and onion until onion is tender, about 4 minutes. Remove from heat.
  • Combine the fresh spinach with a generous 1/4 cup each of creamy mozzarella and flavorful Parmesan cheese, ensuring everything is thoroughly blended before setting it aside.
  • In a large bowl, gently mix together the turkey, oats, milk, egg white, Italian seasoning, salt, and pepper until fully combined.
  • Spread 2/3 of the turkey mixture down the center of an 11x7-inch glass baking dish, creating an indentation in the middle. Fill the indentation with the spinach mixture.
  • Cover the loaf with the remaining turkey mixture, ensuring the spinach filling is completely enclosed by sealing the edges.
  • Roast in the oven until the meat is cooked through and reaches an internal temperature of 165 degrees F (75 degrees C, approximately 30-35 minutes.
  • Finish off by generously scattering the meatloaf with the remaining 1/4 cup of gooey melted mozzarella cheese. Bake for another 1 to 2 minutes to achieve that perfect cheese pull. Allow it to rest for 5 minutes before slicing into delightful portions.
